Visited Ebbe Bangkok and had a really memorable experience. From the moment I walked in, the chef personally greeted me — very genuine and down-to-earth. You can immediately sense that this place is about sincere cooking, not just presentation. The pacing of the meal was excellent. Each dish arrived at the right moment, allowing you to fully take in the flavors without feeling rushed. There’s a quiet confidence in how everything is timed. Food-wise, a solid 9/10. Each dish carried its own identity — clean, precise, and thoughtfully composed: • Starters were light yet expressive • The green sponge-like bite was airy and refined • The caviar dish had richness but stayed balanced • The onion course had deep sweetness with great texture • Desserts were creative without feeling excessive One dish that stood out to me was the apple with tuna. Every individual element was excellent on its own — the flavors were clean, textures were precise, and each component felt intentional. But when combined, it didn’t fully merge into a single unified bite. And interestingly, that didn’t feel like a flaw. If anything, it made the experience more memorable. It felt like a dish designed to make you pause and think — something slightly unexpected that challenges your palate rather than simply pleasing it. It’s not something I’ve experienced often, and that contrast actually added depth to the overall journey. Overall, this is a place where the chef’s personality comes through clearly — thoughtful, sincere, and quietly confident. A refined dining experience that feels honest, and one that stays with you even after the meal ends. Food: 5 Service: 5 Atmosphere: 5 Order type: Dine in Meal type: Dinner Price per person: ฿200–400
