El Tapatio is a taco truck with two or three locations in Bellingham. Unfortunately, none of them are in downtown Bellingham, so a lot of people are missing out on a Good Thing. We’ve sampled their burritos, tamales, tortas and chile rellenos, and found everything to be first rate. Don’t know what some other reviewers are talking about when they say there isn’t much meat in the burritos. Our meals have had more meat than any taco truck we’ve sampled. Unlike some of the competition, you won’t find burritos loaded with potatoes, rice, beans and just microscopic amounts of meat here. I’ve been particularly impressed with their chicken burritos, which are just stuffed with chicken and have a reasonable amount of rice and no beans or potatoes whatsoever, and I also like their chile rellenos, which are very tasty. The tamales are also very good.
