Visiting from Colorado, Had egg, papitas, thick bacon, very simple but delicious because of atmosphere, I met people that knew my family, and he had eggs and a Belgian waffle yummy. Elida's is one of a couple restaurants in Springer, and is the one that is open on Sunday, so I stopped while traveling through. It is a small "ma and pa" local kind of place that serves both Mexican and gringo food. I got there before the rush that ensued shortly after I sat down and was served quickly. The food took a little while to arrive, but that is because it was made to order and not slopped on the plate from a steam table The downside is being charged for chips and salsa, normally complementary at most Mexican restaurants. Then there is the flat 2.50 fee for using a credit card. On a ten dollar ticket, that's 25%! I spent more than ten, but I paid cash. Those negatives aside, I would definitely return.
