Guests don't highly appreciate duck at this restaurant. A lot of visitors suppose that the staff is good at this place. If you want to experience fine service, you should go to Fusion. We were trying to think of comparable dishes on the south side of Lisbon and its pretty difficult! Chef Airosa is achieving a slam-dunk on so many of the plates that we saw come to our table, and the mouth seems to say Yes! as he manages to get things right. The pleasant, secluded ambient above Flavour, the coffee-bar-restaurant which in itself is a pretty unique gathering space in the region, provides the appropriate feeling of one being able to have a special moment. My suggestion for the starters is to try get a selection and share, because these are small exquisite hits that fascinate. We tried the Tapioca “Dice” which are perfectly crunchy and balanced by their mango chutney topping. The Truffle Scrambled Eggs was also pretty divine and reminds us what is good about fusion cooking – it takes your expectation and then introduces something new on top of that, but in a way that seems just right. The Beef Tartar’s tradition of adding in a variety of seasonings, offers the perfect chance for some more innovation in this same vein. And one more example - the pastry tendrils that envelope the Shrimps are so thin and crunchy, giving an amazing sensation in the mouth and nicely balancing the shrimp. The service is warm and experienced, even if the dishes take some time to prepare. But as you can probably tell, everything is worth the wait and is probably understandable. We had a variety of the main courses come to our group. All of them were stimulating and satisfying. The Cod “With Everything” was really executed well. Even a Picanha and a Bitoque – were some steps ahead of the normal plate walking into the divine! There are thrills a plenty on this menu, but make sure to take enough friends so you can try out as many dishes as possible hehe! Desserts will also not disappoint - nothing normal, all with the twist that we could see makes Fusion’s menu so interesting. Either creating novelties, or taking well-known dishes and then extending them with an inspired iteration, through innovations that take them not into the strange, but rather into the sublime.
