We've followed Chef Casey since the Apollo Grill days. Galaxy is our go to restaurant for a night out. We are never disappointed! The braised short ribs are amazing! Desserts are delicious - tonight's choices were the pumpkin praline tart and the mocha pot de creme, but having had the chocolate mousse many times I'd highly recommend that as well. The service was just right - appropriately attentive without being intrusive. Easthampton is lucky to have Galaxy in town! Parking: We've never had issues finding parking.
