The first time I visited Gastón Wine Bar was not the best and I shared my review here. After my experience, the owners contacted me and invited me to return. I share some points about my experience: We were welcomed by both the owners and the chef who took the time to explain their proposal, project and even the design of the glasses they chose. I appreciate your candor and openness in listening to my comments. I think it's something that rarely happens in the industry and it's honest on their part that they want to start off in the best way. The service, which had failed the first time, improved a lot, they took into account that a person from the team was attentive to the arrival of the diners (a cool detail that I noticed without them knowing that I was arriving). Throughout the afternoon, the waiters were within range. We tried the draft wine (white) which was really delicious, fresh and with hints of citrus. This time we tried the tomatoes and we repeated the beetroot dish (which were very tasty from the first visit I tried them). Although I do consider that the prices are high and the portions of the dishes are very small, Sofía and Daniel told us that the prices are not only for the rental price in the area, but also that they want to prioritize working and supporting the community (such as implementing improvements in the park across the street) and maintaining and promoting their work team in a space of growth (with visits to vineyards and salaries higher than those of the industry to avoid bad practices based merely on tips) which is It makes me cool and it does change my perspective on the place. Gaston Wine Bar is a good option to celebrate a special occasion, have some wine and listen to the vinyl that they have prepared every night. Thank you very much and I hope to return soon!
