GIZE was a fantastic experience. Elegant, precise and deeply respectful of Japanese tradition, while still feeling modern and unique. Chef Casper seems to sit beautifully between worlds: high quality Japanese produce, local techniques and seasonality, with subtle nods to his European roots. Every detail felt carefully considered, the ingredients, the crockery, the pacing, the design and the atmosphere. The restaurant is modern and refined, but still warm and deeply connected to Japanese hospitality. This is not a restaurant trying to be a traditional sushi counter. It is very much in a class of its own. Delicious food, beautiful execution, impeccable detail, but most importantly, fun, warm and genuinely welcoming. A very special restaurant in Kobe. In a quiet stretch south of Shin-Kobe Station a sort walk from our hotel, a Danish chef is making one of the most thoughtful arguments in Japanese fine dining: that the cook is only as good as the people whose produce he honours. Casper Alrik Sorensen, trained in Kyoto, mentored by Mr Endo of London’s Michelin-starred Endo at The Rotunda opened Gize in mid-2025 as the Creative Restaurant Group’s first venture in Japan. From the twelve counter seats, you watch him work with the unhurried focus of someone who would rather under-explain a dish than over-plate it. What sets the evening apart isn’t technique, though the technique is exact. It’s the storytelling. Sorensen names every fisherman, every farmer, every grower behind each dish. Each ingredient arrives with a person attached. And he listens as much as he speaks; ask him a question and he answers it with the curiosity of a chef still very much in love with his subject. The signature gesture, though, is one you carry home: for me he generously gave me a small pouch of his salt blend. I love salt! A small thing, but it captures the place a generous, personal, rooted in the belief that hospitality is the long version of cooking.
