Looking for a Mexican restaurant outside of Colorado Springs? Stop by Guadalajara Family Mexican Restaurant in Peyton, Colorado for delicious meals that will leave you completely stuffed. Not only does this restaurant serve house chips and salsa, but they also bring out a bowl of house bean dip to start your meal off with! We split an entree that had shrimp, scallops, chicken, mushrooms, peppers, and onions mixed in a chipotle cream sauce served with a side of rice, beans, and a lettuce bed with guacamole on top. The entree was extremely large and incredibly tasty! The sauce was seasoned perfectly. If we lived closer to this spot, we would visit all the time.
