I am no expert in regional Chinese cuisine, but HE (和) (pronounced "huhr") is the closest thing to genuine Chinese food (as opposed to the much more common Chinese-American fare served nearly everywhere) you'll find in the Harrisburg area. That said, it will definitely not meet everyone's expectations, especially those raised on these typical restaurants that pass for Chinese. HE (和) is "aggressively" authentic, from the chicken with bones to the selection of teas. Situated in a lovely brick house on a side street just off the square in Middletown,  the restaurant is very clean and moderately adorned inside. Parking is on the street or a small lot in the rear. (Look for the 和 characters projected on the entrance after dark.) We learned from our experience that the intention seems to be that patrons will order using their phones, as the online menu is more extensive and up-to-date. Assistance in ordering is available from the wait staff, who will take your order in the traditional way, but the website is set up to facilitate ordering. Just shoot the QR code on your tabletop, which takes you to their website, scroll through the menu, and check what you'd like. (Is this, too, imported from modern day China?) Hope to actually try this next visit. There are several cold tea drinks available, as well as veggie, berry and strawberry yogurt smoothies. B had hot tea, while I tried the berry smoothie. Delicious! There are two preparations of ribs listed as entrees, but suitable as a shared appetizer. We opted for the garlic ribs, as they were rated less spicy. A good sized portion, the ribs are cut flanken style, or across the bone, and some contained bone while others didn't. Tasty and not greasy M choose the sweet and sour pork for her entree, claiming she'd never had the dish before. As someone who has, this was the best I've ever had, in a class by itself. Tasty, firm/crispy, and not cloyingly sweet or sticky. Not typically a pork eater,  M loved them! (Polished off the leftovers for breakfast!) B had a dish they call "Ants go marching," minced pork with sweet potato vermicelli in a mild sauce. I liked it better than she did. She thought it was oily - a comment others have made - and unextraordinary, while I thought it was flavorful and remarkably complex. Anyone who knows me would likely predict I'd order the pork belly with green pepper, which was rated as very spicy. Though from the photo I assumed it would be belly with pieces of green bell pepper, I was pleasantly surprised to find the peppers were actually jalapeños, or the Chinese equivalent. (I don't know how jalapeño chilies could be part of a traditional Chinese dish, but that's research for another day.) The dish was simple but delicious, strips of succulent pork mixed about 1:2 with the chopped jalapeños, tien tsin chilies (the small dried red chilies often found in Chinese dishes), and minced onion. Not for the faint of heart, it was very spicy hot, and I left over a good amount of the jalapeños after finishing off the pork. All I could say was "Wow!" Our meal was relatively inexpensive, around $50 for four entrees, two drinks and tip. Staff was polite, friendly and helpful, and the food was served promptly. I was disappointed the restaurant was as empty as it was on a Friday night; as I said, it is not typical Harrisburg fare, and may not be for everyone. Be adventurous! Can't wait to return!
