When it comes to Chinese food in Egypt, there are three levels: mall Chinese food, authentic Chinese food, and something in between. Happy Panda sits in that middle ground — it takes the familiar dishes you'd find in a mall but tries to make them more authentic. Unfortunately, it largely fails at that. We tried a lot of dishes, and most of them were disappointing. The beef noodle soup was just okay — the beef itself was decent, but it was heavily over-spiced and loaded with MSG in an attempt to build umami flavor that ended up being overwhelming. The fried beef noodles had the same problem: too salty, too many competing flavors, tough meat with a strange texture, and oddly cooked noodles that felt neither authentic nor familiar. The ramen was probably the least offensive of the three — slightly more balanced on the spice and salt — but still not good. The dumplings were decent, though nowhere near the best I've had at a proper authentic Chinese spot. The highlights were the spring rolls, which were genuinely really good, and the kimchi salad, which was amazing.
