New owners have given this local landmark a wonderful new breakie-boost!  Who doesn't want to hang out with a chef from Denmark who recently served me apple-pie french toast and a friendly and engaging chat from Jay the owner.  The chef and I waxed nostalgic over the lost art of homemade whipped cream (yes there was a generous dob of that on my french toast).  My 12-year old daughter and her friend happily munched chocolate chip pancakes.  The service was good but you need to give these folks a break - they just opened and need staff.  Having said that, the staff that waited on us were very professional and attentive. In fact on the second visit with my parents, the server couldn't have moved any faster; she was doing her best under the circumstances.  My Dad was impressed with his corn beef hash noting that it was cooked Mom's way: blackened slightly with a crunch but moist on the inside.  We speculated for a few minutes about whether the Chef broiled it or pan-fried it to get it that way.  We always broiled ours. We also tried out the Spanish Omelette (very good and generous serving), grilled English muffins and robust potatoes the size of small planets.  It struck me that when food is cooked with love and skill, you do tend to pause and start talking about food for awhile.  We have time, let's enjoy it.  The diner sits on the original train tracks and you can read its life story by looking around.  You have a sense that the owners are trying to strike a balance of keeping the diner original while deciding what needs to be restored or changed.  As we drove out of the parking lot, we noticed the entrance landscaping is under construction with the intent being to give a slight facelift to signage and entrance.  Hillsboro is in such need of folks like this who come to our town with a desire to offer something special, wrapped up in something familiar and dear to our hearts.  Please drop by and support this family who have come to our community to earn a living, be part of our community, and bring back the Hillsborough Diner.
