Ichiban Japanese Steakhouse & Sushi Bar in Waco is a beautiful restaurant with an inviting atmosphere. The staff are friendly and attentive, and the chefs are entertaining and put on a great show. However, the food quality can be hit or miss. The scallops and chicken combo is delicious and the salmon and grilled eel sushi rolls go great with hot sake. Unfortunately, the sashimi cuts are too big to eat, and the California rolls are not up to par. The bento boxes come with good fried or steamed rice, but the beef and tempura shrimp are a bit of a let down. The wait times can also be long, and the staff are sometimes understaffed and unprepared. Despite these issues, Ichiban is still worth a visit for a fun experience and decent food.

We enjoy the atmosphere and service .
However the past two trips have been a bit disappointing. We typically start with California roll and Unagi . Which have been tasty. Then two bento boxes. One beef and one chicken .
Last night I started my ordered with a club soda . Which was flat . My waitress gave me some excuse why it was flat . She offered a replacement soda - not a replacement club soda ( was not an option) I declined and told her to just leave the flat soda and bring me another lime ( she charged me 3.00 for the flat soda and lime )
My California roll came after my soup . For some reason there were fruit flies all around our food .
We received our Bento boxes and think our waitress forgot the unagi.
It showed after the dinner was served. ( unagi was ok)
My steak was very tough as was the chicken in my boyfriends bento box . The food quality these past two trips has declined as has the service .
It seems they hire personnel who don’t seem to have good customer service experience-qualifications.
We will give it another try if services are as bad as the past two trips we will be in search of a different restaurant. We don’t mind spending the money for good food !
But when the quality isn’t worth the price , we will not return . Three strikes rule for us.
