A place serving typical Tuscan cuisine, as well as a slow food presence. The raw materials are excellent and are treated impeccably. The variety of dishes offered which follows the seasonality of the various products is much appreciated. Welcoming, intimate and familiar environment, with friendly and kind service that makes you feel almost at home. The appetizers, such as the bread balls, the dumplings and the cream soup, are recommended as well as the gnocchi, the guinea fowl, the peposo and the cinta. Il Grillo è Buoncantore, in the central square of Chiusi, is a restaurant on the Slow Food circuit. The owner is very welcoming, he has that Tuscan panache. He brings us some bubbles, we take a look at the menu, we decide to order a superb and very rich Experience Plate: cured meats and cheeses from small local producers, liver pâté and much more. Followed by pici with white Maremmana ragù: what a delight! At the end of lunch, a long and very interesting conversation follows with the chef Tiziana Tacchi, she tells us her philosophy in the kitchen, some of the products she uses, then she shows me (and tells me in detail how to use it) the cooking box, created by Vanessa Chioccini with leftovers from shearing and patented by Filo&Fibra. It allows slow, eco-sustainable cooking, the food retains its aromas and nutrients. Overall, I was fascinated by it. An address to share with foodie friends.
