Japanese perspective... the zero degree of Japanese cuisine. it's the bistro of the neighboring starred restaurant (hence the "yoko" which means "next door", even if, between us, a Japanese would say "tonari", but hey that's not important). hoping that they don't charge 100 bucks next door for the same kind of experience... so this time we are on Franco-Japanese fusion cuisine, created by a French chef who worked in Japan. Really ? there is such amateurism in the recipes that one would more naturally imagine an individual whose feet have never set foot on the soil of the country and who would have imagined his recipes through his reading of manga. we ordered tapas to share: everything was flat, free, amateurish, superficial, and clearly not designed for sharing with several people. a zero degree service as well; a complacency that is not justified. For a great experience of French-Japanese fusion cuisine, I would recommend the ERH restaurant in Paris, which is also acclaimed by a few Japanese chefs I know...
