Akagyu don is a local speciality in Aso, using leaner beef, cooked medium rare. I mixed it with the onsen egg, miso paste and wasabi. I would say the beef is a little chewy and the flavour is just slightly lacking. Nothing wrong with the whole bowl, the taste is acceptable, yuzu kosho adds a nice spicy and tangy kick.
