Had to stop by the world famous Jack’s Beans here in Kalamazoo while I was visiting my girlfriend at Western Michigan University. This is absolutely a staple of Kalamazoo, you simply have to try the beans. My personal favorite thing on the menu was the beans. I was frustrated by the beans in the toilet bowls and the bean dispensers where the soap should be. But the beans everywhere else made up for the beans I didn’t care for. I had heard the rumors about Jack’s Beans, but finding the establishment is a psychological ordeal in itself. I thought I knew every inch of this college campus, but Google Maps is absolutely useless here, spinning my location icon in dizzying, glitchy circles around campus. It turns out the restaurant is buried deep in the labyrinthine sub-basement. Descending into its shadowy, forgotten depths felt like walking into a tomb. Upon entering the desolate dining room, I was greeted by Jack. He seemed friendly at first, though there was a manic, sleepless gleam in his eyes as he wiped down the counter. He told me he was the caretaker and the sole architect of what he called "the ultimate bean." I sat at a booth, hoping for a menu. Instead, I found a single sheet of paper. "Heeeeeere's JACK!" he shrieked, sliding a piping hot ramekin through the shattered door. "That's it, buddy!" I screamed. "I'm only give you a 4 star rating for your service when I write a Google review." He reached through the hole in the door and gave me his signature "alligator style" beans. I still have no idea what "alligator style" means. Is it a reference to the dark, swampy viscosity of the broth? The aggressive, sudden bite of the hidden spices? Or something more literal lurking at the bottom of the bowl? I was too paralyzed by fear to ask. Trembling, I took the spoon he offered. I took a bite. The flavor was a revelation. The "alligator style" beans possessed a rich, murky depth—a slow-simmered, smoky hickory essence balanced by a savory reduction that gripped my palate. The texture was impeccable; they were soft but never mushy, holding their shape until the exact moment of consumption. It was a symphony of rustic, terrifying flavors. I wept—partly from the terror of the axe, but mostly because I had never experienced such profound gastronomic joy. As Jack stared through the ruined door, his manic grin softening into the proud smile of an artisan, I scraped the bowl clean and asked for seconds. If you are willing to navigate a labyrinth of supernatural dread and survive an axe-murder attempt, you simply must visit Jack's Beans.
