We just discovered Jengibre in Malinalco, and it’s safe to say we’re already planning our next visit. Diego and Claudia’s passion project brings vibrant, fresh Pan-Asian flavors to a town that didn’t know it needed them — until now. We were three, so we started with the sample platter and added one extra spring roll (pro tip: go for two). Everything is beautifully presented and full of flavor. The chicken teriyaki was a hit with my kid, and we also loved the butter chicken with their house-made garam masala and the classic Pad Thai. Our favorite bites? The creamy raita with grilled pita and the cucumber salad — simple, fresh, and perfectly seasoned. The ambiance is relaxed and welcoming, with thoughtful design touches throughout. Bonus: their boutique is full of original pieces by local artists — perfect for picking up unique, design-forward souvenirs. A warm, delicious and creative spot in Malinalco that feels like a true find.
