I had an absolutely incredible dining experience at this Michelin-starred authentic kappa restaurant. The chef is a true one-man show, skillfully crafting a multi-course meal right before our eyes. It felt like enjoying the intimate hospitality of a private chef in a warm, welcoming home setting. The meal began with vibrant spring vegetables paired with pristine sashimi of sayori and tsubugai. The shellfish were exceptionally thick, with a wonderful springy texture — incredibly fresh, clean, and bursting with natural sweetness. Next came perfectly seared red snapper served with seasoned radish. The sear was masterful, imparting a beautiful aromatic depth and star-quality flavor that elevated the delicate fish. The clam soup with Tatsuki, matsutake mushrooms, and bamboo shoots was a highlight — deeply umami-rich, with a beautifully balanced sweetness and wild earthiness that lingered elegantly on the palate. The isaki and squid sashimi were expertly scored, showcasing pristine freshness and delicate texture. The seabass was beautifully skewered and grilled over charcoal, delivering a perfect char that paired wonderfully with the accompanying sauce and cabbage. The smoky notes were simply superb. The supon chawanmushi offered a silky, creamy texture with a beautifully balanced ginger aroma that was both refined and comforting. The abalone was served with a white miso sauce that carried subtle sweet-bitter notes, complemented by asparagus. It was a fascinating and unexpected pairing that brought out new dimensions in the abalone. The Saga beef was outstanding — perfectly cooked and beautifully paired with red mizuna leaves. These leaves offered a mildly peppery, gently spicy character providing a fresh, vibrant contrast to the rich, fatty beef. A wonderful combination. Finally, the perfectly grilled eel over rice was exceptional. The eel was split: one half lightly salted, the other generously coated in a rich, glossy eel sauce that complemented the fluffy rice beautifully. Every bite was pure delight. My only minor critique of the entire experience was the dessert — a rather small portion of caramel ice cream that felt a bit underwhelming after such an outstanding meal. Really enjoyed the experience at Jushu and some dishes like the shrimp and tenderloin beef were out of this world. Several other dishes were however slightly underwhelming so hence no 5 stars. The service and especially the chefs attention to detail made it a great dinner though. Price per person: ¥10,000+ Food: 4 Service: 5 Atmosphere: 4
