Surprised but not for the better. The service was very fast at the beginning, very slow at the end with some dishes being presented and others not. One of the workers entered the bar area and talked about some diners (judging by her face, with not a very good opinion of them) the point is that we were able to clearly perceive this event, and pay €300 to have someone with a mushroom face looking at clients because it's like you don't understand. The atmosphere in the room was cold, the air conditioning left us cold at the end of the meal. Regarding the food, the cut of the fish did not seem virtuous to me at all. We left some thorns on their plate so they could see the mistake and no one came to apologize. On the tasting menu there were two different dishes whose ingredient is egg. Not at all necessary. The niguiris rice was cold (this cannot be forgiven). And the niguiris, according to the chef's choice, could have been five gold medals, and they were very very fair except for the toro which was very tasty. The final feeling is that we do not understand the star or the suns and that this service left a lot to be desired for us. They brought us the bill, didn't ask us about our experience, we paid and left. For me, a place that will be forgotten.

I've been to Kabuki quite a few times, but I had never been to the original one, now called simply Ricardo Sanz Wellington. In essence, it's a fusion japanese cuisine. They also offer traditional japanese dishes, but I think the most interesting part of their menu are the combinations they do. The usuzukuri of scallops with chorizo salt is a must. All of their nigiris are worth trying, although I've got a special spot for the flamed ones. Flamed toro is outstanding. Butterfish with truffle is another classic. This time I had bone marrow gunkan with caviar. The marrow is a really intense bite, really memorable. I don't think the caviar adds that much, so I think it can be skipped in this case. Nice place, nice service, a very complete package. When it comes to Michelin stars, this one has one. Kabuki lost its star recently, and none of the Sushi 99's in Madrid have one. In my opinion, they all offer a comparable experience. They do in fact have a good amount of overlap in the menu. I think you can't go wrong with any of them. Meal type: Lunch Price per person: €100+
