Kappa is a place I’ve wanted to visit ever since I first learned about it five or six years ago from a book called *An Introduction to New Izakayas*. I rarely get the chance to go to western Tokyo, so this was my first visit. Since it’s a long-established izakaya specializing in grilled offal, I was looking forward to it, picturing the grilled offal shops in Tateishi. It was a Saturday in November, and I arrived 15 minutes before opening. There was already one person there. Within 20 minutes of opening, the U-shaped counter—which seats about 12 people—was full. The shop has a super-cool, mid-Showa-era vibe. However, the staff weren’t burly men—they were women with a gentle demeanor. I don’t think there’s a single customer who wouldn’t like them. The menu lists many different cuts, and you can order as few as a single skewer. The proprietress at the counter handled everything—taking orders, grilling, and serving the skewers—all by herself. Her movements were nothing short of magical. She was precise and responsive to the customers’ needs. It felt like a high-end French restaurant. First, for drinks, I ordered “Gokahishu,” a Chinese medicinal wine. The staff member said, “It’s strong,” as she took my order. It was a sweet medicinal wine with a high alcohol content. Although the taste and ingredients differ, it pairs exceptionally well with the grilled offal, much like ume-wari (plum wine). Be careful, though—I suspect you’ll pass out if you drink more than three glasses. To start, I ordered two skewers each of kashira (pork cheek), himo (pork tail), and toro (pork belly) with sauce. After that, keeping an eye on the proprietress, I ordered one skewer each of oppai (pork breast) and harami (flank) seasoned with salt. Both the quality of the ingredients and the grilling were top-notch, and it was delicious. The bill came to 1,730 yen, and we left after 40 minutes. All the customers looked happy and content.
