As its name 燻 (Kunn) says, this place is about smoke - a restaurant devoted to the perfection of a particular idea. Here the proprietors, Kuma-san (Bear) as head chef and Miharu-san with her knowledge of drinks, serve a full omakase menu (food and drink) devoted to smoking - the vast majority of it smoked or concocted in house by Kuma-san. Toast with smoked truffle butter and honey; a gorgeous tartare with vinegar; a whole charcoal grilled abalone with sesame seeds; mouthwatering housemade bacon; and last of all the house speciality - a simple omelette stuffed to the gills with smoked foie gras and truffle risotto. The service is delightful, the other diners clearly devotees delighted to see another inductee join them. This one isn’t so much a secret, as a renowned thing carefully hidden away so it can continue unchanged. Just wonderful.
