LEAF is one of Prague's Michelin Guide restaurants and holder of a Michelin Green Star, celebrating local ingredients, seasonality and sustainability. ️. The evening started with Czech sparkling wine and quickly established the restaurant's philosophy: vegetables tirst, luxury ingredients secona. Asparagus from Hrabětice in a mustard jelly, spinach cream, local beef and an apple dessert formed a concise four-course menu, paired with a thoughtfully curated European wine flight. ️. While I appreciated the commitment to local producers and the opportunity to see vegetables take centre stage, the execution felt uneven throughout the meal. Acidity occasionally overwhelmed delicacy, seasoning was at times too assertive, and a beef course that should have anchored the menu proved surprisingly forgettable. ️. The wine pairings, however, were considerably more successful. A beautifully expressive Mille Lieux accompanied the asparagus, while a 1999 Madeira and a stunning 2004 Dönnhoff Riesling Spätlese were highlights of the evening. The apple ice cream, paired with the latter, was arguably the strongest dish served and captured the comforting essence of apple pie with remarkable precision. ️. LEAF's sustainability credentials and sincere philosophy are admirable, and I am glad to have experienced it once. Yet for me, the wines ultimately left a stronger impression than the food itself. Even though it is located a bit from the city centre it’s definitely worth a visit. The metro is convenient. Superb vegetarian tasting menu, nice wine pairing’s with Czech wines.
