An evening in this restaurant is not just a meal but a journey. And the chef succeeded quite well to embark us on it. I particularly appreciated the influence of South America in some dishes. The waiters were attentive but quite relaxed.

Course 9 This was described as an "Alive" Pineapple since the pineapple has been fermented for 4-5 days thereby creating a taste that's fresh but at the same time, a little bitter, spicy and sweet and also a just a tad fizzy. Quite interesting. Course 10 This course is called the Scare of the Baby Squid. When squids get scared, they spray out some "ink" which is the first part of the course. Diners are asked to first consume the dark sphere which explodes with a hot creamy mix of squid ink, carabinero (king prawn) sauce and a red garlic from Tehran. They are then instructed to follow this intense spicy burst of flavour with the meatier baby squid which is stuffed with okra, chorizo, spicy paprika, garlic, onion, and the legs of squid. Diners can use the squid to wipe up the "legs" made of coconut milk in order to brighten up the intense earthy flavours. So creative and an wonderful pairing of flavours. Course 11 The Harumaki "Autumn" Roll really had my interest peaked as a large vinyl record was first set down at the table prior to the smaller red plate which held the actual course. Harumaki is crispy Japanese spring roll but at La Candela, they mix it up and instead filled the roll with a several stews of Madrid: Callos a la Madrileña, Garbanzos with Chorizo and Morcilla and Punta de Jamón. The result is a hot crispy spring roll with mildly spicy beefy filling and a texture that is more jellylike than what I would expect of beef. Very interesting. Course 12 The Wagyu Beef was melt in your mouth incredible. Cooked at a low temperature in a Spanish red wine sauce mixed with Japanese teriyaki sauce, it was extremely juicy and tasty. The small Japanese pickled radish on top added a pop of sweet and sour to the course. Course 13 The Candy Eléctrico is the most shocking and creative palate cleanser I've ever encountered. Presented in a beautifully carved box, the Candy Eléctrico does a wonderful job of thoroughly cleansing the palate before the dessert courses. Diners are instructed to put the piece of candy on their tongues and as the sweet flavour of the sugar starts to coat the palate, suddenly, it explodes with a mixture of Seagrams gin and timur (a pepper from Nepal). The result of this explosion can only be described as a jolt of cold spiciness (generally associated with the sichuan pepper) with remarkable hints of grapefruit and lime and a slight tingly numbness that made the nerves on my tongue feel like they've been rapidly vibrated. The sweetness from the left over candy shell helps to tone down the explosion but even after the course is complete, there is still a delightful lingering flavour and buzzing on the tongue. Course 14 The Avocado is an avocado, lime and coconut icecream which is coated with a thin white chocolate layer. The coolest part of this dessert is that the skin of the avocado is used to paint the white chocolate coating giving it that dark color. The popsicle had a refreshing citrusy lime coconut flavour and the cilantro and vanilla syrup added the perfect touch of brightness. Course 15 The Tea Time with Masala Chai was my favorite of all the desserts. Masala chai, an incredibly fragrant and aromatic Indian tea, is infused with milk then made into the most exquisite and delicate gel which is held up with a butter cookie base. I was in awe at the flavours of the Masala chai. As you bite into the Masala bubble, the gel just explodes with a wonderful burst of sweet creamy spices which is almost impossible to describe - but definitely the best Masala chai I've ever had. The kumquat on top further enhanced the flavours of the chai by adding the perfect pop of freshness to the warmer creamy flavours. If only I could eat this everyday. Course 16 The Basta is a Sudenese sponge cake filled with sweet Bechamel which is made from an Arabian butter and spiced with Arabic flavours such as caramel, almond, vanilla, cardamom, ginger, cinnamon, cumin, cloves and nutmeg. I was amazed at how cool, soft and airy the sponge cake was while still being moist and having a strong mix of sweet and salty spices. This contrasted well with the creamy hot buttery filling inside. Delicious! Complimentary Course And if 16 courses wasn't enough, I was surprised with one extra dessert to end the meal. The Orange marshmallow started off sweet but ended with surprising spicy notes. The green sphere ended up being a white chocolate with a liquid basil center. The macaron was light with a coconut flavouring. The donut hole was light and perfect and the dark chocolate truffle was very creative with a sweet curry flavour mixed in with some coconut bits. And there you have it! An absolutely exceptional meal.
