Very special with a focus in fermented items. The beef, fish, pasta were phenomenal. The non-alcoholic pairing was very impressive featuring 8 glasses of homemade drinks, each with a kind of fermented ingredient.

A thoughtfully curated tasting menu built around fermentation, with each course offering a pleasant surprise. The pacing of the meal was comfortable and unhurried, and the service was warm, attentive, and professional throughout. I especially loved the corn appetizer that opened the meal. It was a bright and flavorful start that immediately set the tone for the rest of the experience. The somen was another standout—the noodles had the perfect texture, neither too firm nor too soft, and paired beautifully with the sweet shrimp. The sauce was light, clean, and refreshing, serving as a clever transition into the heartier main courses. * The uni risotto was probably the only dish that felt slightly less successful to me. While it was wonderfully aromatic and packed with flavor, the seaweed and fermented wasabi were quite dominant and ended up overshadowing the delicate sweetness and richness of the uni. I found myself wishing the uni had been given a little more room to shine The desserts were undoubtedly my favorite part of the meal and a perfect ending to the experience. The melon soda dessert was both playful and elegant. The sparkling soda and yogurt ice cream blended beautifully together, with the gentle sweetness of the melon complementing the tangy creaminess of the yogurt. The bubbles seemed to dance across the palate, making every bite surprisingly fun and memorable. The freshly baked financier was pure happiness. Even before it arrived at the table, its buttery aroma had already filled the dining room and built anticipation. Warm from the oven, it had a delicate crispness on the outside while remaining moist and tender within. Paired with exceptionally sweet mango and a fragrant herbal tea, it created one of those moments where you instinctively close your eyes and smile. A truly beautiful and satisfying finish to a memorable meal. Will definitely revisit ! Meal type: Dinner Price per person: ¥10,000+ Food: 5 Service: 5 Atmosphere: 5
