Had a wonderful meal at the MAP Cafe. It was located a glass box in the beautiful courtyard of the Musuem of Pre-Columbian Art in Cusco. We had a 5 course culinary journey through Peru, from the coast to the highlands and the jungle, featuring many ingredients that I've never heard nor eaten before, like guinea pigs, cocona, camu camu, uchucuta, etc. Peru has over 4000 types of tubers and over 50 types of corn. Our server, John, described each dish with an eye to the ingredients, their importance to the Peruvian culture and economy, as well as the technique that the chef used to create it.
