Two MICHELIN stars: exceptional cuisine. Worth a detour!

This gustatory experience is a journey through Peru. The menu features the culinary traditions of the Andes and the ecosystem of the Amazon basin. Dining at MAZ Restaurant has always been an experience, but with the arrival of Chef Yuya Nakamura, it has reached an entirely new level of refinement and creativity. Chef Nakamura brings a remarkable sense of precision and artistry to every dish. What truly stands out is his ability to seamlessly weave together the originality and soul of Peruvian cuisine with the elegance and purity of Japanese ingredients. The result is a menu that feels both culturally rich and strikingly modern—each course layered with depth, balance, and a quiet sophistication that unfolds beautifully over time. Equally exceptional is the beverage program led by sommelier Liz. Her wine pairing is not just complementary—it’s an education. She introduces rare and remarkable South American wines with incredible depth of knowledge, sharing the stories, regions, and craftsmanship behind each selection. It transforms the pairing into a journey, adding a whole new dimension to the dining experience. What makes MAZ stand out, beyond the cuisine and wine, is the cohesion of the team. Service is polished yet warm, attentive without ever feeling intrusive. There’s a genuine sense that everyone—from the kitchen to the floor—is aligned in delivering a seamless and memorable experience. MAZ is not just a restaurant; it’s a curated experience where culinary artistry, storytelling, and hospitality come together beautifully. With Chef Nakamura and Liz leading the way, this feels like an exciting and distinctive new chapter—one that is absolutely worth experiencing. Looking forward to come again!

We visited MAZ Tokyo last night. Nice ambience. Food very creative especially the settings and tasty of cos. I would say the chefs hv spent lots of ideas on the presentation. I would prefer a little bit more of Hot dishes In the menu. And we were thrilled in tasting the first few dishes. After the third one, the taste bud started to feel a bit boring as the taste didn’t differ lots w almost the same thick gravy. Overall, a great experience. Food: 4 Service: 4 Atmosphere: 4
