The meal begins with a light seafood course that appears simple, but is already enhanced by a hidden layer of richness from the sauce. Bread is served and slowly transforms into more than just a side. It becomes a tool that absorbs butter and sauce, extending each dish beyond its original portion. It is at this point that the meal deepens, not through the quantity of ingredients, but through the accumulation of fat and texture. The pumpkin potage has a comforting softness, but reveals its weight only after a few spoonfuls.
