I was craving yakitori and came across Merge. The chef is very passionate about the food and it reflects in the flavour and quality of the food. The pork belly yakitori was the highlight and the dessert was a perfect way to end things on a sweet note. The sake Martini was very unique and refreshing...extremely smooth. This is one of the most authentic izakaya experiences I’ve had in a long time. What really sets this place apart is that the chef-owner prepares almost everything from scratch, instead of relying on pre-made ingredients. You can truly taste the difference in dishes like the gyoza, skewers, and karaage — they’re all freshly handmade and not your typical “standard” Japanese restaurant food. The highlight for me was definitely the pork skewer. The owner explained that it goes through an extensive 24-hour process — marinated, air-dried, slow-cooked at low temperature, and then finally grilled. The result is incredibly juicy, tender, and packed with flavour — unlike anything you’d normally find elsewhere. We also tried their lunch special ramen, and it was surprisingly good value. The spicy ramen had a rich and well-balanced broth that wasn’t overly salty like many other places (which often rely on powder-based soup). You can tell the soup here is carefully made. Even the desserts are homemade by the owner, which really shows their dedication to quality and craftsmanship. Highly recommend if you’re looking for a genuine, high-quality izakaya experience!
