Sometimes you arrive at a restaurant with expectations. Other times, you leave feeling that you have experienced something truly special. Mertensia in Lyon gave me exactly that feeling. I have dined at many excellent restaurants over the years, but it is rare for a meal to affect me as deeply as this one did. After speaking with chef Flavien Guarato, I think I understood why. This is not food created simply to impress. It is food made with passion, curiosity, and a genuine love for ingredients. At Mertensia, vegetables take center stage, with the option of adding seafood as a perfect complement. And what a beautiful way they do it. Every dish was visually stunning without being pretentious. Flavors unfolded in layers, often ending with a small surprise. Sweetness, acidity, umami, and minerality danced together on the plate. More than once, I found myself lingering over the flavors, letting the next bite wait so I could fully appreciate the finish and everything it had to offer. The aromas were inviting from the moment each plate arrived. Some dishes carried earthy notes reminiscent of forest floor and mushrooms, while others were bright, fresh, and almost floral. Japanese influences such as miso, kombu, and shiitake added depth and character without ever dominating. Everything felt intentional. Not a single element seemed out of place. What impressed me most was the balance. No flavor was trying to outshine another. Everything worked in harmony. It is often the smallest details that separate a good restaurant from a truly memorable one, and here every detail was perfectly executed. The wine experience deserves special praise as well. The sommelier showed a genuine passion for small producers and wines with personality. The Champagne selections were outstanding, offering energy, freshness, elegance, and balance that elevated the food even further. This was not about famous labels, but about craftsmanship, quality, and stories told through a glass. The dining room is minimalist, calm, and welcoming, allowing the food and wine to remain the focus. I should also mention the value for money. The six-course lunch menu costs only €34 for the vegetarian option and €39 with seafood. The evening menu, with eight courses, is priced at €62 and €72 respectively. Considering the creativity, quality, and level of execution, it represents exceptional value. Mertensia is not about grand statements or theatrical effects. It is about emotion, flavor, and ingredients treated with respect. I found myself smiling throughout much of the meal, and that probably says it all. Book a table and make the trip, even if it is a little outside the city center. It is absolutely worth it. Food: 5 Service: 5 Atmosphere: 5
