Michelin quality food in a comfortable traditional setting. Having only lived in Japan for 9 months now, we are starting to learn the proper ways to dine out in new areas. Still, we found ourselves without a reservation after a day of cycling to Imabari from Onomishi and tried our luck with getting a seat for dinner at Musashi. Don't be us... get reservations in advance. The chef was kind enough to allow us join the evening's seating (easily could have refused our walk-in) and proceeded to enlighten us to a new level of tempura execution. He expertly timed our coursing to catch up with the evening's reservations and made every attempt to explain unfamiliar ingredients despite our elementary level of Japanese. This was our first blowfish sashimi and milt experience. Amazing! The marine equivelant to a luxurious textural crossing of foie gras and veal sweetbreads. The balance of all the accompaniments with each bite was executed masterfully. Among the many vegetable tempura we had, the playful half-golden potato tempura course showed a careful curation of ingredients. The level of starch/sweetness in the potato finished with soft room temperature butter was a simple masterpiece. We finished the savory experience with a course of both tencha AND tendon, another first experience for us. We loved both but felt most enamored with our introduction to the wasabi broth of the tencha. The meal concluded with a final accent of perfectly ripe citrus that the area is known for and a quenelle of frozen sweet cream. We were so fortunate to have had this wonderful meal experience.
