One of the best vegetarian pizzas I have had. Fresh ingredients, a sprinkle of pistachios and some special flavors I could not quite recognize made this memorable. Picking up my pizza, I heard about the fig tree out back that added freshness and a seasonal touch to the local classic of higos con queso pizza option. No lo sabía cuando me casé con ella, pero mi esposa es catadora profesional de pizzas. Aquí en Cuenca, lejos de las legendarias pizzerías de Nueva York y de muchos otros templos de la pizza, se toma su trabajo muy en serio. Por eso, cada semana emprendemos una especie de peregrinación gastronómica a alguna de las numerosas pizzerías que figuran en la creciente lista que ha elaborado gracias a las constantes recomendaciones de amigos y otros fanáticos de la pizza. Antes de empezar, debo dejar algo claro. En Cuenca hay una enorme cantidad de pizzerías, y muchas de ellas preparan pizzas excelentes. Pero para mi esposa, que además es jueza profesional en concursos de tartas y pasteles, una pizza verdaderamente excepcional debe cumplir ciertos requisitos: una masa crujiente, ligeramente tostada en los bordes, ni demasiado gruesa ni demasiado seca; debe llegar caliente a la mesa; y debe tener esa combinación especial de ingredientes que la vuelve inolvidable. Y precisamente las pizzas de Komodo cumplen con esos tres criterios. Nos la recomendó otro catador profesional de pizzas, quien la ubicó en el primer lugar entre las cuatro pizzerías que considera las mejores de la ciudad. Lo curioso es que, a pesar de llevar ya algún tiempo funcionando, prácticamente no tenía reseñas. Así que después del primer bocado, y tras haber probado pizzas en decenas de locales de Cuenca, supimos que teníamos que ayudar a corregir esa injusta falta de reconocimiento. El maestro pizzero de Komodo sabe perfectamente lo que hace, y su entusiasmo por sus creaciones resulta contagioso. Comentó nuestras elecciones —la de pera y la vegetariana— y luego nos hizo un recorrido verbal por el resto de la carta, clasificando sus favoritas. El espacio para comer es elegante, moderno y ecléctico al mismo tiempo. Vale la pena echar un vistazo al video de Instagram donde muestra cómo llegar a sus mesas. Es una joya y uno de mis favoritos de todos los tiempos. Pero volvamos a la pizza. Si le gusta la pizza, ¿qué está esperando? Y si se considera un auténtico maestro pizzero, entonces tiene que probarla. Nosotros solo nos preguntamos por qué tardamos tanto tiempo en descubrir este lugar. ENGLISH I did not know this when I married her, but my wife is a professional pizza taster. In this town, far from the Ray’s of NYC among many others, she takes her job very seriously. Thus, we make a weekly pilgrimage to one of the many pizza joints on the growing list she created from the continual suggestion of friends and other pizza fanatics. Before I start, I must make one thing clear. Cuenca has a plethora of pizza joints and a good many of them make great pizza. But for my wife, who also is a professional pie contest judge, a truly excellent pizza must have a crisp, slightly charred crust that’s not too thick but not too dry. It must be hot when served. And it must have that special combination of toppings that makes it unforgettable. And indeed, Komodo’s pizzas meets all three of these criteria. It was recommended to her by another professional pizza taster who ranked it his first among the four pizzerias he counts as the top choices in town. What’s strange is that, while it has been around for a while, it had no prior reviews. So having tasted pizzas from many dozens of pizzerias in Cuenca, we knew we had to remedy that dearth after our first bite! The pizza master at Komodo knows his stuff and his enthusiasm for his recipes is contagious. He commented on our selections (the one with pear, the vegetarian) and then ranked all of the others on the menu for us. The space inside for dining is elegantly chic and eclectic at once. Check out the Instagram he’s posted showing diners how to navigate to his tables. It’s a classic and one of my all-time Instagram favorites. But back to the pizza. If you like pizza, what are you waiting for? If you think of yourself as a pizza maestro, then you must check this out. We just wonder why it took us so long to find it ourselves.
