umami is one of the five taste in Japan. Sweet, sour, salt, bitter and umami. I take it to mean savory or meaty flavor as in meat or mushrooms. The flavor you get from comfort foods. Japan is a country that uses a lot of smoke, pork, and BBQ but in different ways. At Osaka ramen and sushi you get the flavors of comfort of the South but in different ways. The same joy you get from southern food you can understand in the spicy tonkotsu ramen and other Japanese foods.
