Paik's Noodle is one of a few choices offered in the Ridgefield Hmart. They present the Korean-Chinese contingent of the cuisine in the food court, with familiar favorites such as black bean noodles and tangsuyyuk, a deep fried pork dish served with sweet and sour sauce. Both of these were part of my order during my most recent visit, and I was happily surprised at how many large pieces of pork belly I encountered in the dark, savory sauce. The sweet and sour pork was served separate from the sauce even without my asking (sometimes other restaurants will serve it with the sauce already poured on, which makes the meat pieces lose their crunch rather quickly). The pork pieces had a unique and delicious chew in the crunch, as though there was rice flour used in the batter. Seating is pretty plentiful, even during prime mealtimes. We've never had to wait for a table, and tables turn over pretty quickly. Every Korean food court has its own system. Here's how this one works - Each kiosk's menu and pick up window occupies its own space of the food court, but the actual ordering is at a common register that services the entire food court. There's a number display by each window that alerts customers when their food is ready. After eating, you can bring your tray of dirty plates to the corner of the food court where an employee is likely on hand to help you clear and stack plates where they belong. Lately I’ve been watching culinary wars, and I wanted to try this place out because of the show. We got a P.1 and a p.7 The black bean noodles were really good for both of the dishes. The noodle was chewy and soft and the perfect texture. The meat was tender and the soup was delicious. The spice level and the soup was perfect. It wasn’t overwhelming and it had the right balance where it was enjoyable and kept me warm. Food: 5 Service: 5 Atmosphere: 5
