Pasillo 2011 is a chef-driven street-food operation in an alley in La Florida, and at 10,000 CLP a head, it's the best food-to-price ratio I've found in Santiago this year. The Pad Thai was the standout, sauce with a smoky depth I haven't tasted in this city, noodle texture that held up to the wok heat. The patatas bravas were good enough that we ordered a second round and asked for an extra spicy sauce on the side, which the kitchen sent out without hesitation. What makes this place is the chef-owner. He works the line, comes out to greet, recommends honestly, and runs the floor with a two-to-three-person team that paced our food to how we actually wanted to eat, staggered for sharing, not dumped together because the kitchen was clearing tickets. That's reading the table, not just cooking. The going-away from the chef himself was warm without being performative. Not every dish landed at the same level, the beef udon was the one I'd skip next time, and the ramen egg was hard-boiled where a proper soft-set yolk belongs, but five of six dishes were strong, and the consistency of the chef's voice across the menu (pickled mustard seeds and pickled red onion as recurring signatures) shows real intention. We're going back to try the rest. For anyone who wants chef-driven food in Santiago without the chef-driven price tag.
