Proof Pizza is pretty near Architectural Heritage Center. Taste nicely cooked chicago pizza, sausages and sausage pizza. Many guests underline that the staff is knowledgeable at this pizzeria. I’m from South Side Chicago and I’m a chef, which means I am legally, spiritually, and emotionally required to be annoying about tavern style pizza. I know pizza really well. I grew up going to Pizza del Campo in Chicago as a kid, and I honestly thought I would never taste anything again that reminded me of it that much. Then I had Proof Pizza. Rude, honestly. How dare you make me emotional over a square cut pizza? I was here for Jerry’s Pizza. Then Jerry stopped making pizza. I was here for Bridge City Pizza. Then they stopped making pizza. At that point, I figured I was going to have to put on my chef coat, go full dramatic South Side Chicago exile, and create my own tavern style pizza just to survive in Portland. But nope. Proof Pizza showed up and did the work so I don’t have to. The cracker thin crust, the sauce, the cheese, the whole thing hit that Chicago memory button in my brain. As a South Side Chicagoan, as a chef, and as someone who has been personally victimized by the disappearance of good tavern style pizza in this city, I cannot thank you enough. First time trying out classic thin crust Midwest style pizza and I loved it! The cheese they use was delicious, hand rolled motz sticks were 10/10 and the salad tasted perfectly fresh. The atmosphere they created with exposed brick and trailing plants lining the walls is beautiful and cozy. Excited to go back, this place has easily become my new go-to in the area!
