Just a bit of context.   When moving back to Washington, DC post-hurricane Katrina, I resided in the neighborhood near Georgetown's Law Center for nearly 10 years.  During this time, Proof Restaurant popped-up just around the corner becoming one of my favorite go-to spots.   Five years ago I moved to another DC neighborhood.  However, a little over a week ago, I had a bit of culinary/greedy-ass nostalgia.  With a good friend I decided to visit all of my ole' favorite DC restaurants for my birthday week! When entering Proof on a Sunday night, I felt as if I heard that wild wild west whistling sound.  Like when the camera zooms in on an empty town in a country western movie.  There were maybe 3 people at the bar and one table of a 2-person party dining. Was this attributed to the government shutdown and closure of the city's federally-funded Smithsonian museums perhaps?   Or maybe Proof has just gone downhill in food and service?   Per my recent experience at Proof, I'm gonna go with the latter.‍ Prior to ordering, I informed the waitress of my nut, seed and shellfish allergies.   I attempted to order the crispy cauliflower dish featured as a side; and asked that the tahini be removed. Waitress response:  No it's pre-made. Me:  I see this dish features mushrooms.  Can I just have a side of roasted mushrooms? Waitress returns from the kitchen:  No the chef said he can't do that. Me:  Could I just have the eggplant featured in this dish? Waitress returns from the kitchen:  No our chef says he can't do that.  We really don't do substitutions. My inner thoughts:   - The restaurant is nearly empty. - Proof's overhead/rent is probably high af being located in Chinatown. - There is a government shutdown that will likely decrease Proof's revenue and frequency of diners. But yet Proof's chefs/staff can sauté a side of allergy-friendly vegetables? Lastly my friend ordered the roasted chicken and potato dish.  The presentation was god-awful as if the food was just slopped on the plate.  On Instagram, I saw photos of other diners with the same dish and the presentation was spectacular.  Go figure.  Maybe me or my friend had an ex on Proof's kitchen staff that peeped out and saw us Alternatives to Proof when in Chinatown? Chinatown is filled with restaurants Zatiyna, Jaleo, barmini, China Chilcano, Oyamel and more owned by the awesome humanitarian and Chef Jose Andres.  Delicious food, great prices and awesome customer service (even when it comes to food allergies.)
