Quatris was recommended to us by a Randazzo local and I understand why. The town is famed for its food, and we ate well in other restaurants there, but our meals at Quatris (we went twice in our four days in Randazzo!) stood out for the balance between tradition and innovation. The antipasti was generous with 15 different dishes using an interesting range of local ingredients. The three pasta dishes we tried were all very good, but the spaghetti with almonds, lime and marinated prawns was exceptional. We tried similar dishes elsewhere in Sicily and none were as good as at Quatris. Similarly, we found many restaurants that incorporated the pistachios in their dishes but this often felt more like a gesture to excellent local produce than making a real addition to the dish. By contrast, in the steak with pistachio at Quatris the pistachios elevated great meat into to something really special indeed. The wine by the glass was good quality and well priced. Beyond the food, the setting was modern and relaxed and the staff could not have been more friendly and helpful. Quatris will certainly be our first stop when we are next in Randazzo.
