Why you don’t want to see the kitchenIt is obviously only the most respected and impeccable chef that wants to allow you watching him to prepare your dishes. At Racines a mere and simple glass window devides the dining room from the kitchen. “There” they plated our Asparagus dish, that 20 seconds later was in front of us to be enjoyed. The fois gras paté with Grapefruit was much less convincing as I didn’t palet the overwelming bitternes. The tasting menu continued with yellow tail, cooked to perfection but missing a flavor experience. The duck brest dish was however again a satisfiying plate and the Pinapple desert was heaven. Our five-course meal lasted long three hours because the kitchen was staffed by only two persons preparing every single plate of the whole service with a lot of patience and care. This was but also the reason, I would have enjoyed this dinner more without noticing the slow pace at which the cooking and plating process was working.
