I went all the way from Niigata to Kitakata Ramen Ippei. I ordered ramen that was similar to Chinese soba at my local Soul Food Hangzhou Hotel. The appearance is similar to backfat ramen in Niigata Prefecture, but the taste is different. Delicious, delicious, delicious. This was the king of backfat ramen in Kitakata ramen.
