This review is long overdue since I had my dinner there in January. Before every trip to the Land of Rising Sun, I tend to plan out my more engaging dining experiences with the help of the Michelin Guide. It just so happened that upon looking for another restaurant on Google Maps, I came across Restaurant Destina, which was close to the restaurant that I was searching for at the time. A surprising 5 star rated, for me at the time, not knowing anything about the restaurant. Not 4, not 4.5, but consistently 5 stars. I eagerly made my reservation, and to say the least, I was not disappointed but delighted in every manner of service that was delivered from the elegant dishes that was served, the excellent wine pairing, and the generous hospitality of Chef Ueno and his team there at Restaurant Destina. It was my best dinner there amongst the other 4 restaurants that were all Michelin Star rated during my week stay in Japan. I look forward to my next trip to Japan, where I can partake in a truly epic dining experience again. Until then, I wish the Chef and team of Restaurant Destina many successes. [Restaurant DESTINA @Ginza] A wonderful shop that far exceeds your imagination. Luxurious and exciting cuisine and wine pairings. Such a store is located on the 10th floor of Sakura Marks Ginza 612, located behind Ginza SIX. This building is full of so-called high-end stores. When you get off the elevator, you'll find yourself in a chic and calm atmosphere with 8 counter seats, where you can watch the chef prepare your food right in front of your eyes. There are also private rooms available in the back. The owner and chef, Soushi Ueno, is at the helm. When I looked at his homepage, I found that he has an impressive background. By the way, Mr. Ueno would rather call it French than innovative fusion. DESITINA GINZA course + wine pairing A What I received this time was a 35,000 yen course + 28,000 yen wine pairing. Minions appear Mignons = "small and cute" in French. As the name suggests, this is a finger-sized amuse. Although it was such a small dish, it was made with a variety of ingredients, each one carefully crafted, and it was a very delicious amuse. From the North Country ~2023/Autumn/Ganze~ Ganze means "sea urchin" in Ainu language. The bavarois is made with plenty of horse dung and sea urchin, and is topped with green seaweed jelly, and whelks are hidden behind a foam made from sake and rice. It's like a condensed version of the deliciousness of Hokkaido's sea. Ginza DESTINA's signature dish. The chef steps out from the counter and places the caviar on your plate right in front of you. This is a simple masterpiece with plenty of caviar, Jersey beef cream, and silver leaf. It is said that it was named ``Ginza'' because caviar is enshrined in silver. This is ridiculously delicious. I think caviar is delicious on its own, but when you eat it with fresh cream, the salty taste of the caviar becomes mellow, but the flavor stands out. I was shocked at how delicious it was. Bread and butter Choose one from 12 types of Bordier butter. Seaweed / Unsalted / Chili pepper / Smoked salt / Lemon olive oil / Garlic / Onion / Framboise / Buckwheat / Salted / Vanilla / Yuzu I chose this because the garlic butter gives it a garlic toast-like taste. The bread is made with grains and the aroma wafts from the soba noodles, which is irresistible when eaten with butter. Very dazzling Eggplant and mushrooms are also great supporting players, but the matsutake mushrooms are battered and fried, topped with shredded matsutake mushrooms, and sprinkled with matsutake powder, making this a masterpiece that uses all the matsutake mushrooms. Matsutake mushrooms get their name from the fact that their scent increases when exposed to light. As you can see, the scent of matsutake mushrooms is very dazzling. Tai is older than sea bream Sweet sea bream is older than red sea bream and already appeared in literature from the Heian period under the name guji. The sweet sea bream is grilled and served with saffron sauce. The slightly sour sauce and crispy grilled scales are exquisite. Cows running along National Route 3 A red cow from Kumamoto Prefecture escapes from the ranch run by the chef's uncle and runs along National Route 3. Enjoy the red beef simply with sweet and sour Madeira sauce. The meat is perfectly cooked, giving it a moist, melt-in-the-mouth softness and rich meat flavor that will leave you ecstatic. And garnishes include Swiss chard and Girolle mushrooms. Surprisingly, the fried burdock dumplings are very delicious. This is one item I want to keep. Kuroyuki The frozen truffles are shaved right in front of you and then poured onto the truffle ice cream. It is said that truffles become most fragrant when warmed, but in this case it is in the mouth. So, please put it in your mouth and pause for 1-2 seconds to enjoy it. The fragrant truffle scent filled my mouth and nose, and it was a satisfying experience. Mango/white choc sugar/caseating = "Mango/white chocolate/cheese" It is a dessert where you can enjoy the ingredients as the name suggests. As someone who loves mango, this is an irresistible dish. Coffee/baked sweets Coffee beans are from Guatemala. The fruity flavor of coffee goes well with classic baked goods such as canelés, madeleines, and financiers. It will calm your mind after cooking. It may be difficult to visit many times due to the price, but it is a French restaurant that you should definitely visit at least once.
