The foundation is a chef who was trained in a hotel environment and has adapted to a local setting. Classic dishes form the foundation, but are handled with restraint. The demi-glace is present, yet does not dominate. It supports rather than leads. This creates an unusual balance. The flavours are lighter than expected, not because they are weak, but because they are not overpowered. Salt and fat are held back. The result is a clarity that makes the meat itself the centre of attention. This is best expressed by the beef cutlet.
