Roll-it on Calle Larga is a gem if you love sushi in Cuenca. I recently tried the sushi which was fresh and flavorful, with a good variety of rolls to choose from. Prices are fair for the quality you get, making it perfect for any occasion. Just be sure to book ahead during busy times. I'd give Roll-it four stars for its great food, nice vibe, and top service.
