presents as regulation mix of flavours and textures, until discovery of unexpected complexity. two types of mango; usual tart and crunchy, but also sweet and yielding. and coffee mixed into slather. bitter nutty of which plays nicely against sweet umami of heh koh, and also insistent heat of chilli. so good claim to nobility, if not quite royalty.
