Food at Savva
Savva, a fine dining establishment in Moscow, serves contemporary Russian cuisine with Scandinavian and French influences. The ambiance is cozy and the interior design is reminiscent of early 20th century luxury. Prices are high, but adequate for the quality of food and location. Savva is located in the prestigious Metropol hotel, offering a view of the Bolshoi Theatre and the Kremlin from its outdoor terrace.

The menu features a variety of dishes such as the delicate crab salad, the mouth-watering salmon halibut and cod pie, and the tasty vareniki with mushrooms. Cocktails like the eldflower spirit and Brancamenta mix well with soft drinks like San Pellegrino water. The wine selection is extensive, including a Russian white wine made of sibirkovi grape.

Savva is known for its Russian tasting menu, which includes hot borscht with pork rilles, pike dumplings in Champagne sauce, beef tenderloin with mushrooms and wheat cream, honey cake with raspberry sorbet, and ginger tea. The restaurant also offers a set menu with an explosion of flavors that is highly recommended.

Service is attentive and professional, with staff who speak English and are knowledgeable about the menu. The restaurant's special features include its Michelin star and its outdoor veranda with a view of the Bolshoi theatre. While the price may be a prohibiting factor for non-business locals, Savva is worth the splurge for a once-in-a-lifetime experience.

The restaurant got its name in honor of philanthropist Savva Mamontov, who founded the legendary Metropol Hotel. This is an elegant restaurant of new Russian cuisine, which received a Michelin star in 2022. The cuisine here is presented as an author's cuisine, led by Andrey Shmakov. The interior is decent, but it doesn't quite match the overall atmosphere of the hotel. The difference becomes especially obvious after visiting the magnificent domed hall of the old Metropol restaurant, where history comes to life amid the splendor of a huge stained glass dome, a witness to the most important events of Russian history and culture over the past 120 years. In the Savva restaurant, the space is narrower and divided into two floors — the majestic and beautifully decorated ground floor and the more cozy second floor with an electric fireplace. In 2025, in honor of the 120th anniversary of the Metropol Hotel, a special menu was presented called "Russian classics Metropol 120", which included such historical dishes as the Stolichny salad from 1961, Murano cabbage soup with pickled pineapples from 1905, fish solyanka from 1976, cutlet "Fireman" and cake "Napoleon".. It was these dishes that we decided to try.The hodgepodge disappointed us somewhat, it did not meet the standards of the author's cuisine. We also tasted the delicious borscht with duck, which reminded us of the Grand Metropole restaurant in taste and serving, and bread was served on top. The portion was noticeably smaller than in previous years. The old luxury was gone.Russkeal's water was delicious and refreshing. But the restaurant uses filtered tap water to make tea... I understand that this is more economical than using good water. However, the fee for a pot of tea ranges from 10-18 euros, which means that it should be brewed with more care and with good water.
