I really, really enjoy going to the SEN bar because the food is always super fresh and delicious. Preparation sometimes takes place directly in front of the customer. You can choose on site or when making a reservation (recommended because it is always very full) whether you want to sit at the bar (running sushi) or at a table. At the bar, small boats sail along in front of you where you can take whatever you want and at the end the plates are counted and accounted for. You can choose directly from the menu at the table. The staff has always been super friendly and helpful with questions.
