As a Korean American, I think I walked into Shia with pretty high expectations, especially knowing it was Chef Edward Lee behind the concept. The ambiance was beautiful, polished, and thoughtfully curated and the service felt refined without being overly stiff. You can tell a lot of care went into the overall dining experience. That said, I left feeling a little underwhelmed by the food itself. Everything was visually appealing, but very few dishes left a lasting impression flavor wise. I understand fine dining leans toward smaller, more composed portions, so that part may just come down to my own personal preference so please disregard the review if you don’t care. Still, I found myself wanting more depth and satisfaction from some of the dishes. The sundae especially stood out to me for the wrong reason it was beautifully presented, but so small and subtle that I could barely taste or enjoy it before it was gone. Honestly, I’ve had a simple $7 sundae from H Mart that felt more satisfying. The dessert was amazing and it had reminded me of my childhood I believe it was like a jujube shaved ice? After watching 'Culinary Class Wars', I became a huge fan of Edward Lee and just had to visit this restaurant. Every single dish was a classic, with a magical story behind it. The most mind-blowing part was the final dish made with gochujang (Korean chili paste) and raspberry. I wonder if it was a tribute to his famous chili pepper ice cream from the show! Halfway through the meal, I was already completely mesmerized by the chef's culinary artistry. An unforgettable dining experience! Price per person: $100+ Food: 5 Service: 5 Atmosphere: 5

Love the culinary creativity. Highly recommend doing the Korean pairing. I visited 610 Magnolia (another Edward's restaurant in Louisville Kentucky) a while ago, and personaly I prefer SHIA as the menu infused with Korean culinary much more. Staff are nice. The major drawback is the bar area: it's right next to the door, feels like a waiting area, feels a bit unsettling sitting there, and interior of this area is mid.
