SYOKUDO HIROSE is a very good B, close to A, but not quite there yet. The shop is still new, and its presence has not yet fully settled into the neighbourhood, but the cooking already has a clear identity. Although it looks like a small shokudo, the structure is closer to a Western-style dining room, with options such as a chef's lunch plate, pasta, fish with sauce, small sides, soup, bread or rice. This is not casual café food pretending to be lunch; there is a chef's sequence to it: main dish, side vegetables, sauce, soup, and starch, all trying to form one plate. The scale is small, the service is personal, and the room has the quiet density of a neighbourhood place still finding its rhythm. For me, lunch is the right time. The chef's changing plate is the best first order because it showcases the broadest range of dishes: fish, vegetables, sauce and soup rather than one heavy dish. This is a new, small Western-style shokudo, not quite an A, but already showing signs of becoming one. Food: 4 Service: 4 Atmosphere: 4
