San Tarcisio is the real deal - a genuine neighborhood spot in Rome packed with locals, along with pilots from the nearby airport stopping in (always a great sign of quality), far from the usual tourist traps. We loved it so much we ate here three days in a row. The menu hits all the classic Roman notes, and for the most part, the kitchen delivers. The Amatriciana, Pasta alla Gricia, Ragu Bolognese, and Pasta alle Vongole were all top-notch. When they get it right, it’s incredible: the very first Carbonara I ordered was genuinely the best I’ve ever eaten. The only reason this drops from five stars to four is consistency. On our final visit, the Carbonara missed the mark - the cheese had clumped up instead of forming that smooth, creamy sauce. Still, if you want authentic Roman pasta at fair prices surrounded by locals, it’s well worth a visit. Just hope the kitchen is having an "on" day.
