Superb sushi extremely satisfying with a very friendly Sawada-san. Had a great time with fellow customers who are all there for a genuine experience focusing on enjoying the food itself. Price per person: ¥10,000+

Seats can only be booked online, and often are released the same day or day before. This is by design so that the shop is "easier" to visit if you're local. I've eaten a lot of sushi in Japan and Sawada is probably the most religious experience I've had. The flavors are rustic and punchy, and the course is quite large. You will likely walk away stuffed and needing to chug some water. There's reason this remains one of the top ranked sushiya in Japan, even after 20 years.

(Note that this place is at Floor 3, not Floor 1.) A sushi counter run by Chef Sawada and his wife (who explains some of the dishes in English, and handles some of the admin, server, and second chef roles). It’s one of the easiest top sushi counters you can book—if not the easiest. While Sawada has only six seats, he tends to release Omakase slots one at a time—the day before the seating, or on the day of the seating, and these slots stay up for a while—so they are still very possible to book if you check on the day before your desired date, or on the day. He deliberately makes it difficult for regulars to rebook, so this allows first-timers to enter easily. (And seeing as I was at a table of foreigners, I think he likes talking to non-Japanese people too, even if he has limited English—but his English ability is enough to carry simple and fun conversations.) However, note that he doesn’t allow groups or three or more to book—he prefers single diners, and groups of two at most. Food-wise—the sushi was good—this was a fun sushi counter, with bigger-than-average sushi portions and slightly salty rice. The ingredients were fresh—and this is clearly a sushi master with lots of experience. He has more dishes than the usual sushi counter too (so the price may be a little more worth it). He has a lunch course (nigiri-only) and dinner course (nigiri and otsumami—some light bites). The lunch has more nigiri, but I would recommend the dinner so you can try some seasonal produce and dishes other than fish. His otsumami were very simple—some were just the produce, raw. Since he doesn’t have electricity in his kitchen (he uses charcoal), the meal as a whole was prepped and cooked simply as well. The no phones (and no photos) rule (though you use your phone under the table) was fine—the pace of the meal and conversation may be so fast, you wouldn’t be able to text or take notes anyway. Phones would slow the pace of the meal down (and at two hours forty five minutes, it is not a short meal). He loosened up as the conversation progressed (and it helped that my counter had several experienced fine dining foodies, so they had some tea to share)—so while it was scary and stiff at first, it was a fun experience overall! Would recommend this sushi counter if you want a top sushi experience—while each dish wasn’t the best I’ve ever had, they were very good. He’s a fun guy (even if he doesn’t seem like it at first) who is committed to his craft and “artistic integrity”! I really respect that.
