Is this the best dang fugu in all of Japan? Probably close! Seirin is an interesting restaurant in that it morphs from fugu restaurant to tempura-ya to onetime innovative bistro depending on the seasons. Sourcing is consistently flawless, and regardless of the season, you’re likely to encounter “pinnacle” versions of ingredients you’ve not quite seen this way before. (One friend who dined here shared a photo of a massive akagai that made my jaws drop, and I consider myself semi jaded, haha) However, I did have some qualms about my meal. I was still kinda-hungry after my refill of porridge at the end of the meal, but wasn’t famished and so declined more porridge. Honestly, the quantity of fugu could be increased in this case (maybe more meat with the tecchiri, or another way of prepping the meat?). Maybe it would have been different if I had something different like the fugu shirako, but disappointingly it was not yet in season. More generally, I felt like the menu was a bit truncated for the price paid. If it had more volume, or dishes with different prep styles, I’d be more likely to return.
